Done both the i2imca and the rallymoto training weekend.
Both were great and I took away very different things from them, - i2i was a good introduction to offroading, but burt and moly gave me the bug for riding off road... highly recommend the weekend with them, but will be returning to Tom as well - he is closer to me and I'd like to try his advanced offroad stuff.

Re: Off Road Course
Best to choose someone who offers dirtbike training on dirtbikes rather than adventure bikes.
Falling off a £10,000, 250 kg bike wears a bit thin after a while, as does picking it up again afterwards.
Wheeldon Farm in Devon uses 125cc Huskys: ideal!
The lighter and less powerful a bike is the better, once you are off tarmac.
The only people who will tell you different are those offering training for beginners on big bikes.
I could teach almost anyone the basics of off-road riding in an afternoon on my 250 GasGas Pampera, even if they've not ridden a bike before.
I wouldn't dream of trying on my CCM 400, let alone my KTM 950.

Re: Off Road Course
I doubt he'll go wrong with Black Desert. Craig was ten years at BMW ORS, Tamsin also worked there. Not to mention they have about 20 bikes there and are excellent and patient teachers, not to mention having a right laugh.
Re: Off Road Course
