Time to get out the cardboard and the gaffer tape. Make up a couple of boxes the right size, smoother in gaffer tape for strength and then see how much space they have for the gear you want to take. I forget if you've got tracks already, but you can always tape them onto the bike to see how they look. That's what I did anyway, and then went for small as possible, because I can always strap a couple of waterproof stuff-sacks on top.

I fitted a pair of Ardcase panniers supplied by Roger Munsey, to my GS only two weeks ago. I went for the asymetric option which has both the 37 litre and the 42 litre panniers. Although I've not used them in anger yet, there appears to be tons of room in both.
I'm facing redundancy in the next few weeks and if push comes to shove then the panniers will get used extensively on a nice long trip to Europe.
