The Odessa Canyon in the Spanish Pyrenees.
I've not been down in the Canyon as we hiked and climbed our way to the rim to look over into the void. If you look closely you can see a road and car park down there somewhere. the Odessa Canyon is said to be Europes answer to the Grand Canyon. Defo one to put on the list and fantastic biking roads all the way there too.
Edited to add - you can also reach the view point where I took this pic on a forestry road and it's open to motorcycles. If anyone wants details just ask.

I've done a fair bit of trailriding in the Pyrenees, but only the French side.
AS you say-- fantastic vistas and quiet roads and tracks.
We actually rode up some of the ski runs.
What impressed me were the markings on the roads for tour de France riders, i was out of breath with an engine!!!!
