Hello, I'm from Portugal although live in London.
You'll be fine speaking in English in most places, and certainly Spanish is much more understandable than french!

In what to see:
North: Douro valley and it's amazing vineyards. Great roads. Worth to stop in Porto and try their "francesinhas".

Center: Definitely Serra da Estrela. It has great historic villages that will transport you to medieval times: Sortelha, Monsanto, Piodao - at least these 3 are a must. Great mountain roads and infinite choice of trails. Good base to stay is the city of Covilha.

South: The interior is great but I would advise following the beautiful coast from Lisbon until Sagres (Algarve). If you try to stay as near the sea as possible, you'll find great roads with amazing views, and some gravel/sand roads as well.

Then head to Lagos (Algarve) where you'll find the most beautiful Portuguese beaches (IMO).

hi the Penada national park in the far north of Portugal has some great roads also Galicia in northern Spain has a fantastic coastline and great food

+ 1 for Galicia and north coast of Spain.

But I love the entire of that coastal route all the way up through France and around to Caen/Cherbourg.

This post made me realise that over my time I have done the route from Bayona/Vigo all the way up. But take it slow, like a good whiskey.

These are all great suggestions so thanks to all of you.

I knew about the Michelin maps but had forgotten so I'll order some today.

We might take a month and do it properly.

Any great foods that I shouldn't miss? I love meat, the wife loves fish and we both love eating outdoors.

I can't find Ibiz on my shiny new map or Google maps.
Where is it in relation to Porto?

Lol...its a hotel chain but they are far better in portugal than uk and france lot...
