I was there last week, went to Luxembourg after, very scenic, then overnighted in Bouillion.

Good Irish pub in Cochem. (thumbs)

From Cochem, you could head down the Mosel Valley to Schweiz.

Yep I agree with others, try Luxemburg. Very often often overlooked, but great biking. Vianden, I also agree very nice place to stay. Get the map out, explore and enjoy!

Try north east and the Harz Mountains, base yourself in either Goslar or Quedlinburg and explore the region for a couple of days.

Mosel Bikes know the area very well as they are based out there and full of excellent advice; looked after us very well when we came in via Luxembourg

I was going to say that too.

Nurnburgring is nothing special if your not doing a lap on the circuit (which I've never done as even that isn't is to my liking)
The Technik museums are excellent ! So much to see there ! Planes, trains, cars, machines and even space tech ! (I've been to the one in Speyer but apparently both are more or less equally good) http://speyer.technik-museum.de/
It'll end in tears I tells ya.

We rode this http://www.deutsche-alpenstrasse.de/en/home/ a few weeks ago and had a ball. Garmisch is on it. There are some stonking passes into Austria from it too. :)
