You will be fine with a 125. I did a lot of travelling like that on one and enjoyed it immensely. Don't try pushing too fast as the engine will be working a bit harder but that's not much issue at this time of year. With panniers the weight distribution should be better than a top box. A new pair of locking Krauser K2 panniers, 42 litre, brand new off eBay for £135 for the pair....I already have frames. Krauser sell the frames for €90 plus €21 post, for the pair. Not bad at all.

The chair is an essential. You can get an airbed that folds into a chair. It takes less room than a chair and mat together and you get a decent sleep at night.
